    Ingredients needed for making Aappam and Chicken white paaya

    1. For making Aappam

    Raw rice - 500 grams

    Boiled rice - 500 grams

    Urad dhal - 100 grams

    Fenugreek - 1 teaspoon

    Coconut - 1 piece

    Baking soda - 4 pinches

    Sugar - 3 teaspoons

    Salt - As required


    2. For making Chicken White Paaya

    Chicken - 1 kg

    Bay leaves - 2 pieces

    Cinnamon stick - 1 piece

    Cloves - 5 pieces

    Stone flower (Kalpaasi) - 3 pieces

    Fennel seeds- 1 teaspoon

    Large onion - 4 pieces

    Ginger-garlic paste - 3 teaspoons

    Green chillies - 3 pieces

    Mint - 1 handful

    Tomatoes - 2 pieces

    Coconut - 1 piece

    Cashew nut - 15 pieces

    Fresh cream - 25 ml

    Coriander leaves - 1 handful

    Cooking oil - 5 teaspoons

    Salt - As required

    • First, wash the raw rice, boiled rice, urad dal, and fenugreek well. Then, combine them and let them soak together for about four to five hours. After soaking for five hours, grind this mixture in a grinder until it becomes smooth.

    • Add a small amount of salt to the ground batter and mix it well. Be careful not to add too much salt to the aappam batter.

    • The batter should ferment properly. Once it has fermented well, grate a whole coconut and extract the milk, then add it to the batter.

    • After adding the coconut milk, mix in the sugar. Finally, add the aappam soda and stir well. Now, the aappam batter is ready.

    • Heat the pan on the stove. Once the pan is hot, pour a spoonful of aappam batter into it. After pouring the batter, lift the pan and swirl it around.

    • This will spread the batter in a circular shape. The edges of the aappam will be crispy, while the centre will remain soft. Cover it and cook well before serving.

    • First, place the chicken in a pressure cooker with the right amount of salt and water. Cook it for 2 whistles and then set it aside.

    • Next, take one coconut and grate half of it. Extract coconut milk from another half. Combine the grated coconut with cashewnuts and grind it into a paste, then set it aside.

    • After that, heat a wide, heavy-bottomed pan on the stove. Once hot, add cooking oil. When the oil is hot, add bay leaves, cinnamon, cloves, stone flower, and fennel seeds to sauté.

    • First, chop a large onion and add it to the pan. Sauté the onion without changing its color. If the onion turns golden, the dish will not turn out well, so keep it light.

    • Once the onion is cooked, add ginger-garlic paste and sauté until the raw smell goes away. Next, add green chillies and mint, and continue to sauté.

    • After that, add tomatoes, stir well, and then mix in the cooked chicken and the water used to cook the chicken.

    • Stir everything together, cover the pan, and let it cook for two minutes to allow the chicken to absorb the spices.

    • After cooking the chicken with the masala for two minutes, add the ground coconut and cashew mixture and sauté it.

    • After a little cooking, mix in fresh cream and let it simmer for about five minutes. Finally, add coconut milk and the required amount of salt.

    • Once it boils, sprinkle coriander leaves on top, and your creamy chicken white paaya is ready now.

    Some Notes about Aappam and Chicken white paaya

    If there is excess Aappam batter, it can be stored in the refrigerator for up to two days. However, set aside the appam soda, coconut milk, and sugar for later use. 

    Storing Aappam batter after adding coconut milk, baking soda, and sugar will cause it to spoil quickly. Spoilt batter won't give us the right taste and texture for Aappam.

    If you prepare the Aappam batter in the same quantity I mentioned above, the Aappam will turn out soft like cotton. 

    Adding fresh cream to the paaya will give it a slightly sweet taste. If you prefer no sweetness, you can skip the fresh cream entirely. 

    In paaya, If you want more spice, adjust the amount of green chillies according to your taste.
