Special Masala for preparing Chicken Gravy and Chicken Fry
1. Ingredients for Special Masala
Coconut - 1 piece
Small onions - 1 handful
Garlic - 1 handful
Ginger - 25 grams
Cumin seeds - 1 teaspoon
Fennel seeds - 1 teaspoon
Black pepper - 1 teaspoon
Poppy seeds - 1 teaspoon
Dried red chillies - 3 pieces
Cloves - 4 pieces
Curry leaves - 1 bunch
Coriander powder - 2 teaspoons
2. Procedure for preparing Special Masala
- In a mixer, combine grated coconut, small onions, garlic, ginger, cumin seeds, fennel seeds, black pepper, poppy seeds, dry red chillies, cloves, curry leaves, and coriander powder. Add the required amount of water and grind all the above ingredients raw.
- Now the Special Masala is ready. By using this masala, we are going to prepare both Chicken gravy and Chicken fry.
How to make Chicken Gravy using Special Masala
1. Required Ingredients for Chicken Gravy
Chicken - ½ kilogram
Cinnamon sticks - 2 pieces
Cloves - 5 pieces
Large onion - 1 piece
Tomatoes - 3 pieces
Curry leaves - 1 bunch
Cooking oil - 5 tablespoons
Special masala - prepare the masala in the above given ratio
Salt - as needed
2. Procedure for preparing Chicken Gravy
- First, heat a Cooker on the stove and add some cooking oil. Once the oil is hot, add cinnamon, cloves, and curry leaves for tempering.
- Next, add finely chopped onions and sauté until they are golden brown. Then, add tomatoes and cook until they are well mashed.
- Finally, add the grinded special masala and sauté until the raw smell disappears. Make sure that the masala is cooked thoroughly.
- Cook the masala nicely until the water in the masala goes dry completely. The masala should roast well until the colour of the masala changes dark.
- You have to roast the masala nicely; the gravy will be more flavourful and tasty if we roast the masala nicely. You have to keep the heat low while doing this.
- Once the masala is well roasted, add the chicken and sauté it thoroughly. Then, add the required amount of water and salt and stir well. Now close the cooker and turn off the heat after three whistles.
- The pressure of the cooker should come down completely. After that, you have to open the cooker and stir the masala nicely.
- Turn on the stove and boil the chicken gravy for another 5 minutes. The oil should get separated from the gravy. This is the correct consistency for switching off the stove.
How to make Chicken Fry using Special Masala

Chicken - ½ kilogram
Large onions - 2 pieces
Tomatoes - 3 pieces
Ginger-garlic paste - 2 teaspoons
Chilli powder - 1 teaspoon
Pepper powder - 1 teaspoon
Ghee - 2 teaspoon
Cooking oil - 3 teaspoons
Salt - As needed
Special masala- From the special masala we prepared before, just take only 100 grams, this will be sufficient for this preparation.
2. Procedure for preparing Chicken Fry
- Heat a pan on the stove and add cooking oil once it's hot. When the oil is heated, add chopped large onions and sauté until they turn golden brown.
- Next, add the tomatoes and cook them thoroughly. Once the tomatoes are nicely cooked and softened completely, add the ginger-garlic paste. Sauté the ginger-garlic paste until the raw smell disappears completely.
- Then add the chicken and sauté it for a minute. Now add the chilli powder and the Special masala. Sauté them together for another minute.
- Next, add the appropriate amount of water and salt. Stir them all together. Cover the pan and allow the chicken to cook properly.
- Once the chicken is tender and well-cooked, sprinkle some pepper powder on top, drizzle with ghee, and give it a final stir.
