    Required Ingredients for Paneer Stuffed Pesarattu Dosa

    1. To make Pesarattu Dosa Batter

    Green gram - 500 grams

    Raw rice - 200 grams

    Cumin seeds - 1 teaspoon

    Green chillies - 2 number

    Ginger -  2 pieces

    Asafoetida - a pinch

    Salt - as needed


    2. To make Paneer stuffing

    Paneer - 200 grams

    Palak Spinach - 1 handful (optional)

    Large onions - 2

    Cumin powder - 1 teaspoon

    Chilli powder - 1 teaspoon

    Curry leaves - 2 sprigs

    Coriander leaves - 1 handful

    Cooking oil - 2 teaspoons

    Salt - as needed 


    Procedure for preparing Paneer Stuffed Pesarattu Dosa

    1. To prepare the batter for Pesarattu Dosa

    • For preparing dosa batter, first we have to wash the green gram and raw rice thoroughly. Then soak them in water for 8 hours.

    • After soaking, blend the green gram and the raw rice along with cumin seeds, green chillies, ginger, a pinch of asafoetida, and the required amount of salt in a mixer until you get a smooth batter.

    • There is no need to ferment this batter. After blending, you can use it right away to make dosas. Now our Pesarattu Dosa Batter is ready.

    2. To Prepare Paneer Stuffing

    • To make paneer stuffing, first heat a pan on the stove and add cooking oil once it's hot. 

    • When the oil is hot, add a finely chopped large onion and sauté well. Once the onion is nicely cooked, crumble the paneer and mix it in the pan along with the onions. 

    • While the paneer is cooking, add finely chopped curry leaves and coriander leaves, and sauté everything well.

    • First, wash and chop the Palak spinach finely, then add it with the paneer mixture and sauté it well. Cover the pan and cook until the spinach is tender. 

    • You can add spinach if you want, or you can skip it if you prefer. It is completely optional.

    • Adding palak makes this dish even richer in protein. It also provides us with many other nutrients too.

    • Then add cumin powder, chilli powder, and the required amount of salt with Paneer. Stir everything well till they combine and cook nicely.  Now our Paneer Stuffing is ready.

    How to make Paneer Stuffed Pesarattu Dosa

    Now, both the dosa batter and paneer stuffing are ready. Let’s see how to make a crispy dosa with these two. 

    • Place a dosa pan on the stove, and once it is hot, take a ladle of batter and spread it thinly to make the dosa.

    • Next, we are going to add a secret flavour enhancer for extra taste. Do you know what it is? 

    • It can be either Idli powder or garlic powder. You can choose either one to add in Dosa. 

    • This will give the dosa extra flavor. Sprinkle any one of the powders evenly over the dosa. Make sure you sprinkle it all over the Dosa. 

    • Then, pour a spoonful of ghee evenly over the surface of the dosa. Keep the stove on low heat. 

    • Once the dosa is crispy, place the prepared paneer stuffing on top of it and spread it out fully. Then fold the dosa and serve. Now our Crispy Paneer Stuffed Pesarattu Dosa is ready.
