Thirupagam is a traditional dish from South India made with gram flour, cashew powder, ghee, and sugar. It is especially famous in the Thirunelveli district of Tamil Nadu.
In Tirunelveli, one of the most popular sweets after halwa is Thirupagam. This sweet is a favourite of Lord Murugar. At the Thiruchendur Murugar Temple, devotees receive thirupagam as prasad.
This dish is prepared as an offering to Lord Murugar after the Kanda Sashti Surasamharam ritual. During Brahmotsavam festivals, this sweet is an important offering in many important temples.
During the Diwali festival, the people of Nellai prepare this traditional sweet. It looks similar to kesari or Mysore pak when made.

How to Make Thirupagam
Required Ingredients:
Besan flour - 1 cup
Cashew powder- 1 cup
Milk - 2 cups
Sugar - 1 cup
Homemade ghee - ½ cup
Saffron - 2 pinches
Edible Camphor - 1 pinch
Procedure for Making Thirupagam:
- Start by grabbing a large pan and placing it on the stove. Turn the stove on and add one cup of besan flour to the pan.
- Next, dry roast the besan flour until the raw smell disappears and you can smell a delicious aroma.
- Once you notice the nice smell, turn off the stove and let the roasted flour cool for a bit. After it cools, sift the flour into a bowl. Then, pour in 2 cups of boiled milk, making sure the milk is at room temperature, not hot.
- Mix the flour and milk together well, making sure there are no lumps. While you do this, soak some saffron in the boiled milk for about 15 minutes and set it aside.

- Now, turn the stove back on and place a heavy-bottomed pan on it. Pour the besan flour mixture into the pan and cook it until it thickens.
- As it cooks, add 2 teaspoons of ghee and stir it well. When the mixture gets thicker, add in one cup of sugar. The mixture will loosen up and become a bit watery after adding the sugar.
- At this point, add a pinch of edible camphor and the saffron-infused milk to the pan. Stir everything together so that all the ingredients blend nicely.

- When the mixture thickens again, add one cup of cashew powder and mix it in well. Make sure the cashew powder is ground to a fine rawa consistency by using the pulse mode on a mixer grinder.

- While the mixture is cooking, you’ll need to add ghee along the way. You will need about half a cup of ghee for this recipe.
- At first, the mixture will absorb all the ghee, but as it reaches the right consistency, it will start to release the ghee back.

- The mixture should have a halwa-like texture and should not stick to the pan. When it’s still a bit loose, transfer it to a bowl. After it cools down completely, it will thicken a little more.
- Once the thirupagam mixture has the right onsistency, turn off the stove and move the thirupagam into a serving bowl.
