    Today, we are going to make an amazing white sauce chicken pasta. Western foods like pizza, burgers, and pasta have become super popular in our town, and everyone loves to eat them.

    Especially, it is popular among children who love these dishes. The aroma, colour, and taste of these foods attract kids easily. 

    These dishes attract everyone from younger to elder and make them eat these dishes frequently. 

    Our kids mostly like to eat these types of foods in hotels, or they will order and eat them at home. We all know eating outside foods frequently is not good for our health. 

    Instead of ordering or buying these foods in hotels, we can make them at home easily. 

    In that way, we are going to make one of our favourite dishes, White Sauce Chicken Pasta, at home, which is healthier and tastier than hotels.

    This pasta is said to be influenced by Italian and French cuisine. There are many different shapes of pasta, and each shape gives you unique flavour and taste when it is prepared.

    There are many pasta varieties, even though the most favourite variety is the pasta, which is made with white sauce. The creamy texture of this pasta attracts most people.

    There are many types of pasta, but when it comes to the one that most people love to eat, it's definitely the pasta made with white sauce.

    Before, pasta was made only with plain flour (Maida). Now, there are many types of pasta, like wheat pasta and millet pasta. Pastas made from wheat and millets are very nutritious.

    We are going to add chicken and lots of vegetables in our pasta recipe. Adding chicken to the pasta will increase its protein content. Including vegetables will add fibre.

    So this dish is going to be a very nutritious and healthy dish.

    1. For White Sauce Chicken Pasta

    Pasta - 400 grams

    Boneless chicken - 500 grams

    Large onion - 2 pieces

    Red bell pepper (Capsicum) - half

    Green bell pepper (Capsicum) - half

    Yellow bell pepper (Capsicum) - half

    Sweet corn - half a cup

    Carrot - 1 piece

    Purple cabbage - 100 grams (optional)

    Garlic - 10 cloves

    Pepper powder - 1 teaspoon

    Chilli flakes - 2 teaspoons

    Oregano - 2 teaspoons

    Italian seasoning - 2 teaspoons

    Butter or ghee - 3 teaspoons

    Salt - As needed


    2. For White Sauce

    Boiled milk - 1 liter

    All-purpose flour (Maida) or wheat flour - 4 teaspoons

    Butter or ghee - 4 teaspoons

    • First, cut boneless chicken into small pieces and place them in a pressure cooker with a little water.

    • Cook for 2 whistles and then set it aside. Keep the water used for cooking the chicken separately, as it will be needed for the pasta. Set the well-cooked chicken aside.

    • In a Kadai (pot), add maida or wheat pasta, along with the necessary amount of salt & water, and bring it to a boil.

    • To prevent the pasta from sticking together, add 2 teaspoons of olive oil. If you don't have olive oil, you can use cooking oil instead. 

    • Let the pasta cook well for about 15-20 minutes. Once it is done, drain it and set it aside.

    • First, peel the large onion into thin layers and then cut it into squares. Chop the red, green, and yellow bell peppers into square pieces as well.

    • Green bell peppers are usually available, while red and yellow ones can be harder to find, so use them if you can.

    • Some people may not like cabbage, but if you like to add it, you can add it or you can skip it completely; it's optional.

    • Next, cut the carrot into long strips. Now, keep all the chopped vegetables separately.

    • Then, heat a pan on the stove. Add 3 teaspoons of butter or ghee to it. Once it is hot, add chopped garlic & sauté.

    • Next, add the chopped onions, red bell peppers, green bell peppers, yellow bell peppers, carrots, sweet corn, and cabbage.

    • Sauté all the vegetables lightly without cooking them completely; they should remain slightly crunchy. 

    • Then, add the cooked chicken to the mixture and stir well. Now add chilli flakes and oregano, mixing well. 

    • Add salt to taste to the mixture. Set aside this sauteed vegetable and chicken mixture.

    • Next, heat a wide heavy-bottom pan on the stove. Once it's hot, add 4 tablespoons of butter or ghee. Then, mix in all-purpose flour (maida) or wheat flour. 

    • Keep the stove on medium heat. The flour has to absorb the butter completely; stir it continuously till it roasts fully and turns a slight brown in colour. 

    • After this, gradually add in the heated milk little by little to the flour and stir it continuously.

    • Stir it till the milk and the flour are mixed completely, until it becomes creamy. This is the white sauce.

    • Next, add pepper powder and the right amount of salt for flavor. Now the white sauce is ready.

    • In the prepared white sauce, add the stock water used to cook the chicken. Then add in the cooked pasta, the crunchy fried vegetables, and the chicken in this white sauce. 

    • Finally, sprinkle the Italian seasoning, chilli flakes, and oregano on top of the white sauce, pasta, vegetables, and chicken mixture.

    • Stir it well until all mixes together. Yes, now our yummy and creamy white sauce chicken pasta is ready. Serve it hot with toasted garlic bread.

    Some Notes on White Sauce Pasta

    We can also make this white sauce pasta as a vegetarian dish by avoiding chicken. Instead of chicken, you can even add mushrooms with the above-mentioned vegetables to make it even tastier.

    You can use any type of pasta as you like (Maida, whole wheat, or Millets). Adding whole wheat pasta or millet pasta will make this dish extra nutritious.

    Usually white sauce will be made with plain flour (maida). If you want to avoid maida, then you can use wheat flour instead.
