1. For White Sauce Chicken Pasta
Pasta - 400 grams
Boneless chicken - 500 grams
Large onion - 2 pieces
Red bell pepper (Capsicum) - half
Green bell pepper (Capsicum) - half
Yellow bell pepper (Capsicum) - half
Sweet corn - half a cup
Carrot - 1 piece
Purple cabbage - 100 grams (optional)
Garlic - 10 cloves
Pepper powder - 1 teaspoon
Chilli flakes - 2 teaspoons
Oregano - 2 teaspoons
Italian seasoning - 2 teaspoons
Butter or ghee - 3 teaspoons
Salt - As needed
2. For White Sauce
Boiled milk - 1 liter
All-purpose flour (Maida) or wheat flour - 4 teaspoons
Butter or ghee - 4 teaspoons

- First, cut boneless chicken into small pieces and place them in a pressure cooker with a little water.
- Cook for 2 whistles and then set it aside. Keep the water used for cooking the chicken separately, as it will be needed for the pasta. Set the well-cooked chicken aside.
- In a Kadai (pot), add maida or wheat pasta, along with the necessary amount of salt & water, and bring it to a boil.
- To prevent the pasta from sticking together, add 2 teaspoons of olive oil. If you don't have olive oil, you can use cooking oil instead.
- Let the pasta cook well for about 15-20 minutes. Once it is done, drain it and set it aside.
- First, peel the large onion into thin layers and then cut it into squares. Chop the red, green, and yellow bell peppers into square pieces as well.
- Green bell peppers are usually available, while red and yellow ones can be harder to find, so use them if you can.
- Some people may not like cabbage, but if you like to add it, you can add it or you can skip it completely; it's optional.
- Next, cut the carrot into long strips. Now, keep all the chopped vegetables separately.
- Then, heat a pan on the stove. Add 3 teaspoons of butter or ghee to it. Once it is hot, add chopped garlic & sauté.
- Next, add the chopped onions, red bell peppers, green bell peppers, yellow bell peppers, carrots, sweet corn, and cabbage.
- Sauté all the vegetables lightly without cooking them completely; they should remain slightly crunchy.
- Then, add the cooked chicken to the mixture and stir well. Now add chilli flakes and oregano, mixing well.
- Add salt to taste to the mixture. Set aside this sauteed vegetable and chicken mixture.

- Next, heat a wide heavy-bottom pan on the stove. Once it's hot, add 4 tablespoons of butter or ghee. Then, mix in all-purpose flour (maida) or wheat flour.
- Keep the stove on medium heat. The flour has to absorb the butter completely; stir it continuously till it roasts fully and turns a slight brown in colour.
- After this, gradually add in the heated milk little by little to the flour and stir it continuously.
- Stir it till the milk and the flour are mixed completely, until it becomes creamy. This is the white sauce.
- Next, add pepper powder and the right amount of salt for flavor. Now the white sauce is ready.
- In the prepared white sauce, add the stock water used to cook the chicken. Then add in the cooked pasta, the crunchy fried vegetables, and the chicken in this white sauce.
- Finally, sprinkle the Italian seasoning, chilli flakes, and oregano on top of the white sauce, pasta, vegetables, and chicken mixture.
- Stir it well until all mixes together. Yes, now our yummy and creamy white sauce chicken pasta is ready. Serve it hot with toasted garlic bread.
