    Prawn - 1 kilogram

    Large onions - 3 pieces

    Tomatoes - 6 pieces

    Ginger-garlic paste - 2 teaspoons

    Turmeric powder - ½ teaspoon

    Chilli powder - 1 teaspoon

    Kashmiri chilli powder - 1 teaspoon

    Coriander powder - 1 teaspoon

    Pepper powder - 1 teaspoon

    Fennel powder - ½ teaspoon

    Cumin powder - ½ teaspoon

    Garam masala powder - 1 teaspoon

    Coriander leaves - 1 handful

    Ghee - 3 teaspoons

    Cooking oil - 3 teaspoons

    Salt - As needed

    • First, you need to clean the prawn well before using them.

    • Take a pan and heat it on the stove. Add 1 teaspoon of ghee and 3 teaspoons of cooking oil, and let it heat up.

    • Once it is hot, add chopped onions and sauté them.

    • When the onion is well sauteed, add ginger-garlic paste and cook until the raw smell goes away.

    • Now, add chopped tomatoes and sauté it. The tomatoes should cook down well and become mushy. They need to reach a thick thokku consistency.

    • Once the tomatoes reached the correct consistency, add turmeric powder, chilli powder, kashmiri chilli powder, coriander powder, fennel powder, cumin powder and garam masala powder. Sauté them well. Then add the required amount of salt.

    • Now, add the cleaned prawn to it, then mix in half a glass of water (since the prawn will release a lot of water, half a glass will be enough). Cover the pan and let it cook.

    • Cook the prawn for 5 minutes by closing the pan with a lid; open the lid after 5 minutes and cook the prawn in the open pan until it reaches the thokku consistency.

    • The cooking time is very important; it should be well cooked and tender in 7 to 10 minutes.

    • Once it is cooked and has achieved that perfect thokku consistency, finish it off by sprinkling some pepper powder, adding a drizzle of ghee, and garnishing with fresh coriander leaves before serving.

    Some Notes for Making Prawn Thokku

    The prawns should be well-cleaned. You should definitely remove the intestinal (gut) part fully before using it.

    If you don't remove the gut properly, there is a chance of food allergies. So, make sure to clean the gut well before using it.

    Cooking prawn for the right amount of time is very important. If you cook it for more than 10 minutes, it will become rubbery.

    Cooking it for 7 to 10 minutes is just right. Do not cook it longer than that.

    We should select and use nicely ripped tomatoes for this prawn thokku. I prefer natty tomatoes. Ripped natty tomatoes give excellent taste and colour to this prawn thokku.
