    Garlic (chopped) - 2 teaspoons

    Channa dhal - 2 teaspoons

    Ginger paste - as needed

    Green chillies - 2 pieces

    Bay leaf - 1 piece

    Cloves - 3 pieces

    Cinnamon stick - 1 piece

    Cardamom - 2 pieces

    Coriander leaves (chopped) - 1 handful

    Salt - as needed

    Turmeric powder - ½ teaspoon

    Chilli powder - 1 teaspoon

    Garam masala - ½ teaspoon


    Procedure for Making Potato Rice

    • First, wash 250 grams of rice well and cook it. After cooking, drain the rice and place it in a separate container, covering it to keep it warm.

    • Take a pan and place it on the stove. Once it is hot, add three teaspoons of oil or ghee and heat it up.

    • After the oil or ghee is hot, add half a teaspoon of mustard seeds, one teaspoon of cumin seeds, and one teaspoon of fennel seeds, and sauté them well in the oil.

    • Once they are well sauteed, add a bay leaf, three cloves, a cinnamon stick, and two cardamom pods, and sauté them together.

    • After the aroma rises, mix in a teaspoon of pepper, two teaspoons of chickpeas, ten cashewnuts, and three tablespoons of peanuts, and sauté well.

    • Then, add three dried red chillies, curry leaves, and two teaspoons of chopped garlic cloves.

    • Sauté everything together nicely. Then, add the ground ginger paste and two green chillies, and continue to sauté.

    • Let everything cool for a little while. Then, put it in a mixer and blend it well. Set it aside.

    • Next, take a clay pot or a pan, place it on the stove, and when it gets hot, add a little oil to heat it up.

    • In the hot oil, add half a teaspoon of mustard seeds, one teaspoon of cumin seeds, some curry leaves, and two dried red chillies.

    • Sauté these well in the oil, then add three chopped onions. Once the onions turn golden brown, add two chopped tomatoes and cook them together.

    • When the onions and tomatoes are sauteed, add a pinch of salt and a pinch of asafoetida powder, then mix well.

    • Once the tomatoes are cooked down, gradually add four chopped potatoes and sauté them on medium heat until they are well cooked.

    • Once the potatoes are well cooked, add half a teaspoon of turmeric powder, one teaspoon of chilli powder, and half a teaspoon of garam masala.

    • When the potatoes are tender, mix in half a cup of coconut milk and sauté well, then add the required amount of salt.

    • After confirming that the potatoes are fully cooked, combine them with already cooked rice and stir them well.

    • The masala potato mixture and cooked rice should combine together properly.

    • Now, turn off the stove. Sprinkle a handful of chopped coriander leaves on top of the potato rice, which is ready to serve.
