    Chicken thighs are ideal for this dish because they remain juicy during the long cooking process. Sesame oil is the key ingredient, adding a rich aroma.

    Keep in mind that the recipe is simple, but the flavours are strong; the main reason is the sesame oil and dried chillies we use in this dish.

    Chicken pieces

    Country chicken - 1.5 kilograms

    Sesame oil - 4 tablespoons

    Mustard seeds - ½ teaspoons

    Curry leaves - 1 handful

    Small onions - 50 pieces

    Coconut (chopped) - ½cup

    Dried red chillies - 20 pieces

    Turmeric powder - ½ teaspoon

    Peanut - 1 tablespoon

    Ginger-garlic paste - 2 teaspoons

    Coriander leaves - 1 handful

    Salt - As needed


    Procedure for Making Chinthamani Chicken

    • First, cut the country chicken into small pieces. Place them in a big bowl. Rinse them well with turmeric and salt.

    • Washing chicken with turmeric powder helps remove germs, harmful organisms, and other impurities.

    • Place the cleaned country chicken pieces in a large bowl. Add turmeric and salt to the chicken and marinate it for about half an hour.

    • While the chicken is marinating, place a clay pot or a pan on the stove. Add one tablespoon of sesame oil and heat it up.

    • Once the oil is hot, add half a cup of finely chopped coconut pieces. Fry the coconut until it turns golden brown, then remove and set aside.

    • Fry the peanut in the same oil and keep it aside.

    • Next, add three tablespoons of sesame oil in the same pan and heat it. 

    • Once the oil is hot, add half a teaspoon of mustard seeds and a handful of curry leaves. Sauté them well in the oil.

    • Heat the mustard seeds until they pop, then add twenty dried red chillies without seeds and fry well.

    • After roasting the chillies, add fifty small onions and keep frying.

    • Sauté small onions until they turn golden brown.

    • Then, add two teaspoons of ginger-garlic paste and cook until the raw smell disappears.

    • After that, add the marinated country chicken. Stir them well.

    • Then add a little water and check the salt level. Cover the pan. Let the chicken cook thoroughly for a while.

    Final few more steps for making Chinthamani Chicken

    • After thoroughly cooking the country chicken, take the previously roasted peanuts, remove their shells, and break them into halves. Combine these with the chicken, and mix them thoroughly.

    • After that, sprinkle a handful of chopped coriander and half a handful of curry leaves over the country chicken pieces.

    • Then, add the roasted coconut pieces we set aside earlier and mix everything well.

    • All the ingredients should blend completely. Now turns off the stove.
