    Paayasam is also known as kheer. This kheer is a type of sweet dish made by boiling milk, jaggery, or sugar, and rice together.


    Instead of rice, we can add millets in this paayasam to increase its nutritional value.

    Some people add cardamom, dried fruits, and nuts to enhance the flavour of paayasam and serve it deliciously.

    Required Ingredients for Making Thinai Paayasam

    Foxtail Millet - half a cup (100g)

    Split Green Gram (Moong Dhal) - quarter cup

    Jaggery - 1 cup

    Ghee - 2 teaspoons

    Almonds - 10 pieces

    Cashews - 10 pieces

    Dried Grapes - 5 pieces

    Black Raisins - 5 pieces

    Milk - 1.5 cups

    Cardamom - 4 pieces

    Saffron - a pinch

    Coconut - half a cup

    Water - 3 cups

    Salt - a pinch.


    Procedure for Making Thinai Paayasam

    • First, place a pan on the stove and heat it slightly. Then, add half a cup of foxtail millet to the hot pan and roast it well.


    • Those who do not like dry roasting can add a little ghee to the pan and roast the foxtail millet well.


    • When you roast the foxtail millets lightly, add half a cup of moogn dhal and roast them together.


    • When you smell a nice aroma, turn on the stove and add the roasted foxtail millet and moogn dhal to the cooker.


    • Rinse the millet and moogn dhal in the cooker with water two or three times and then drain well.


    • After washing the grains, add two and a half cups of water, cover the cooker, and cook the grains until three whistles sound.


    • Place a pan on the stove. Add one cup of jaggery to it. Pour in enough water to dissolve the jaggery.


    • Once the jaggery melts completely, turn off the stove. Check whether the grains are cooked properly by opening the cooker lid simultaneously.


    • Heat two teaspoons of ghee in a pan. Add chopped cashews, chopped almonds, half a cup of chopped coconut pieces, and both raisins.


    • Roast them on medium heat until they are well sauteed.


    Final Steps for Preparing Thinai Paayasam

    • Now, take a big heavy-bottom pan and place it on the stove and heat it.


    • Once it's warm, add one and a half cups of fresh milk. Once the milk has boiled fully, slowly mix in the cooked grains.


    • Then, strain the jaggery syrup using a strainer and add it to the mixture.


    • Mix them well and add a pinch of salt. Cook the grains, milk, and jaggery until the paayasam thickens a bit. Once it thickens, sprinkle a pinch of saffron on top.


    • Next, grind cardamom pods well and sprinkle them over the boiling payasam.


    • Finally, add the roasted chopped cashews, almonds, dried grapes, black raisins, and chopped coconut pieces on top of the paayasam, then turn off the stove.
